History of Sambar

Sambar has been a part of South Indian cuisine for centuries. The origins of sambar can be traced back to the Maratha ruler, Shivaji. It is believed that his chef, Raghunathrao, created sambar by mixing tamarind, pigeon peas, and vegetables. Over time, the recipe evolved, and today, there are several variations of sambar, each with its unique taste and flavor.

Ingredients Required For Sambar Recipe

To make sambar, you will need the following ingredients:

For Sambar Powder:

  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp fenugreek seeds
  • 4-5 dry red chilies
  • 1/4 tsp asafoetida

For Sambar:

  • 1 cup toor dal (pigeon peas)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cups mixed vegetables (such as drumstick, brinjal, okra, carrot, potato)
  • 2 tbsp tamarind paste
  • 1 tbsp jaggery
  • 1/2 tsp turmeric powder
  • 2 tbsp oil
  • Salt, as per taste

Step-by-Step Process to Make Sambar

Step 1: Pressure Cook the Toor Dal
Wash the toor dal thoroughly and pressure cook it with 2 cups of water and a pinch of turmeric powder for 3-4 whistles or until it becomes soft and mushy.

Step 2: Prepare the Sambar Powder
In a pan, dry roast coriander seeds, cumin seeds, mustard seeds, fenugreek seeds, and dry red chilies until they turn fragrant. Add asafoetida and roast for a few seconds. Grind the roasted spices into a fine powder using a mixer or grinder.

Step 3: Prepare the Vegetables
Wash and chop the vegetables into medium-sized pieces. In a separate pan, heat oil and sauté the onions until they turn translucent. Add the chopped tomatoes and cook until they become soft and mushy. Add the chopped vegetables and cook for 2-3 minutes.

Step 4: Add Sambar Powder and Tamarind Paste
Add the prepared sambar powder and mix well. Add tamarind paste and jaggery and mix well. Add 3 cups of water and salt, as per taste.

Step 5: Cook the Sambar
Cover the pan and let the sambar cook on medium heat for 20-25 minutes or until the vegetables become tender. Mash the cooked toor dal and add it to the sambar. Mix well and let it simmer for another 5-7 minutes.

Step 6: Serve the Sambar
Garnish the sambar with fresh coriander leaves and serve hot with rice, idli, dosa, or vada.
